    Since its the height of summer and a lot of good veg's are coming in. Anyone ever hear of tomato pie? Cmon you Southerners that I know we have here. I made one last week and it was great...anything from our Southern folks on it? Down home recipes...?

      Tomato and Vidalia Onion Pie

      1 pie crust
      2 large tomatoes thinly sliced
      1 Vidalia Onion thinly sliced
      1 tsp salt and pepper
      1 tbsp olive oil
      2 tbsp chopped fresh basil
      ½ cup cheddar cheese
      ½ cup mozzarella cheese
      ½ cup grated parmesan
      1/3 cup of mayonnaise
      Preheat oven to 350. Bake pie shell for 8 to 9 minutes before filling
      Lay sliced tomatoes on a paper towel sprinkle with salt and cover with another paper towel to dry for 15 minutes (Don’t skip this step)
      Combine mayo and cheeses in a bowl
      Layer tomatoes and onions in pie crust in alternating layers. Sprinkle with pepper and drizzle olive oil over tomatoes and onions.
      Top with chopped fresh basil and spread the mayo and cheese mixture over the veggies. Top with a little extra basil.
      Bake for 40 – 45 minutes until brown


      Hope you have Vidalia Onions up north and Duke's Mayonnaise. If you don't have mozzarella, I have used 1 cup of sharp cheddar.

      If I'm making it for myself....(my husband can't eat pork) I leave out the parmesan and basil, and fry 1/2 lb of bacon and top the cooked pie with crumbed bacon. It's so good!

      I have another recipe for Tomato Pie without the onion if you want it as well.

      Yes we have Dukes and Vidalias. That sounds delicious. I have no issue with onions. Thanks Josie.

    Only two ways I eat tomatoes....fried green and the “t” in a BLT..😮

    but i’m a bit odd....
    Wandering wherever I can, mostly in Eastern Arkansas, always looking down.

      I might do this I know my cheese eating wayne will eat this .
      Granny don’t know what she is eating anymore at 90 .
      20/200 with glasses . That’s another subject . Can't ask she is deaf .

        Smoked whole chicken spatchcock style. Jalapeno beer bread. Local grown sweet corn, my own homegrown peppers, tomatoes and some cool water sandwich...(watermelon)...

            Pulpo! I ate it with my father when I was young usually in spagetti sauce. A local fishing charter captain I fish with here in Tampa Bay takes a bite out of them when brought up while fishing lololol That's his schtick.

          A friend of mine was going fishing the other day so i stopped by and dropped off some bait that I've been catching and freezing. We then went out to his garden and he gave me a few giant zucchinis and some beautiful tomatoes. My wife made some zucchini bread and I stuffed one with some eggplant, mushrooms, onions, tomatoes and sausage.

            This is a great time of year when there are so many local and homegrown vegs available. Compliments to your wife that looks delicious!!! By the way I fish also. What kinda bait are you catching and freezing?

          Hey Frank (BabaORiley) I mostly saltwater fish here. I usually target fluke and striped bass this time of year. I few weeks back the spearing were coming up into the river near me and spawning. I was throwing the cast net on em from the dock and managed to freeze up quite a bit. They are getting expensive from the local tackle shops and the quality isn't even close to what I'm catching.

              I know a group of Greek guys that launch their boat where I'm catching these spearing and they seemed upset that I use them for bait. He was like nooo you eat them, they are delicious. I would rather trade them in for a nice fat fluke.

              The ones with the teeth (summer flounder) around here we call them fluke. We have winter flounder also, the ones with the lips. We catch them in the spring and fall.

ID:	383334 Junket. Used to be common nutritional dessert when I was a kid. My Mom made vanilla, strawberry and chocolate. It's a rennet custard. Junket comes in little foil packets each contained one tablet good for 2 cups of meh/yum. Rennet is made from the insides of goat stomachs or something like that. It curdles milk. Rennet is also used to make cheese. But in the 60's at least, this was around a lot. Can't find it much anymore.

              My grandmother would make those when we were kids, usually if someone had an upset tummy. Good stuff, I'm going to have order some tablets and have a go at making some.

              Summer squash casserole, homemade buttermilk biscuits. And a shout out to Josie and her recipe for tomato pie. I give it five stars. Its excellent.

              Got on the big crabs a few days in a row. Made a bunch of crab cakes, vacuume packed and froze most but finally got to enjoy all the effort.
