Potatoes, corn, carrots, tomatoes, lobster, spices like crazy, with green beans and fried potato wedges on the side, buttered biscuits in mountains, iced tea, man o' man, there is a reason I love the South!

After you cook a low country boil, all ingredients get drained and dumped on newspaper. In SC, it's red potatoes, corn on the cob, shrimp and old bay seasoning.

This year we had sloppy joes and underdone potatoes. As long as I don't see Marley in the night, I can live with that, lol!

Rotisserie chicken and peach cobbler. I thought about a piece of stuffed salmon maybe Thursday or Friday I will have that. I like to stuff my own with seafood mixture of scallops and shrimp.

Pretty easy just cut a pocket in the center of the salmon wedge then stuff it in. Bake at 350 for 15 minutes and its done. I like mine a little longer so I go 20 minutes. Skin has to be on to create the pocket. Put on foil skin down. When its done take a spatula to it and skin will stick to the foil.

Hotel buffet. Over-cooked Turkey, potatoes, etc.

But we checked off a bucket destination for me at least. The Angkor ruins in Cambodia.

1200ad or so. These are the central ruins of one of the big temple complexes. It covers about 3.5 square miles or a couple thousand acres. Very Indiana Jones or Tomb Raider feel to it.

Surface Hunter, most of the individual ruins were built during the life time of the king that started them. (Bunches of kings built many of them over hundreds of years.) Some were changed as religions changed, and some were left to the jungle quickly and some were maintained as temples.

The biggest one, Angkor Wat (which is also the largest religious temple in the world) was built in 30-40 years with tens of thousands of workers in 1200ad.
