Cream cheese is easy as is ricotta and mozzarella. Only rennet and an acid like vinegar are needed. I bought a special culture a few times to make Gouda which came out good too. I was discouraged by New Jersey's laws that forbid the sale of raw milk. Despite my calls and letters to lawmakers it hasn't changed. One north Jersey lawmaker, a state assembly woman whose name I can't recall introduced a bill to legalize raw milk sales but it stalled. Good luck, I should get back to that kind of fun.
Speaking of gardens JR I have to recommend my new favorite to grow... Sweet potatoes. Few pests, store all winter, and the store ones taste like cardboard anyway. Start with plants instead of cuts.
