Hey Josh, Yes I believe you nailed it "Jefferson City Chert".
Hey 11KBP, I looked at Neanderthal's Jefferson City Chert and It is a match.

I think this Missouri knife is also  Jefferson City Chert
but not nearly as striking as the end scraper. 2 5/8 inch.
